We don\u2019t cut corners. We never use powdered eggs or substitutes. Our little \u201csuperpower\u201d is simple: fresh eggs, cracked by hand just before baking. This gives our pastries their beautiful flavour and that soft, fluffy texture that can\u2019t be achieved any other way.
