Our Sourdough

The ingredient that makes our bread so unique and full of flavour.

Sourdough Bread

Not every food trend is good for our health. Sourdough bread is different. It is not a temporary trend, but a return to something that has been a natural foundation of baking for centuries. The most important element is the sourdough starter itself – a natural culture that gives bread its unique flavour, aroma and higher nutritional value.

What Is a Sourdough Starter?

A sourdough starter is a natural mixture of flour and water that ferments over time at the right temperature. During this process, wild yeasts and lactic acid bacteria develop. These natural cultures allow the dough to rise naturally and create real sourdough bread. Fermentation also improves the flavour, texture and nutritional value of the bread.

Why

Sourdough Bread Is Better!

Sourdough bread offers many health benefits. In addition to its exceptional flavour, it also stands out because of the properties created by the natural fermentation process. The lactic acid bacteria involved in fermentation have a very positive effect on the gut microbiome and help protect the digestive system.Like natural prebiotics, they can help reduce digestive issues such as indigestion, constipation or diarrhoea. During fermentation, some unwanted compounds naturally present in grains, such as moulds or nitrates, are also neutralised. But that is not all. Lactic acid slows the development of harmful bacteria and has a positive impact both on the body’s immune system and on the shelf life of bread. As a result, sourdough bread spoils much more slowly and stays fresh for longer.

Thanks to the long fermentation process, sourdough bread is also rich in minerals such as zinc, iron and magnesium. This is particularly important for people with iron deficiencies or those following a meat-free diet. It also contains B-group vitamins. Sourdough bread has a lower glycaemic index than traditional yeast bread, which helps provide longer-lasting satiety and a more stable level of energy. For this reason, it is often recommended for people who care about a balanced diet or who want to manage their weight.
