Mielonka is one of those products that used to be a staple in a traditional pantry. Simple, solid, and made to taste right above all else. It’s pork that’s minced, seasoned, and preserved in a jar, which helps keep its natural juiciness and flavour.
In a good mielonka, structure and taste are everything. It’s not a smooth paste, but a slightly coarse, meaty texture where you can feel real pieces of meat. Lightly seasoned, without overdoing it, so nothing takes away from the natural flavour. It works perfectly on fresh bread, with pickled cucumber, mustard, or simply on its own when you want something quick but proper.
